Commercial Blast Chillers and Shock Freezers Introduction:
Commercial Blast Chillers and Commercial Shock Freezers are a type of commercial refrigeration cabinet designed to rapidly drop hot food temperature using a fiercely driven cold air, this is done so the food can safely be stored ie in an Upright Commercial Blast Chiller or to be frozen so it can be reheated at a later date. This method is used for safety as if you let food to cool without refrigeration it can allow for harmful bacteria to develop as the cooling process takes far too long and this can be extremely dangerous.
If your kitchen needs pre cooked food and chilled food all at the same time then you must have a Commercial Blast Chiller or Commercial Shock Freezer. This is because it can be very dangerous to keep both cooling hot foods and already cooled food in the same commercial refrigerator as the hot food will make the hole commercial refrigeration units temperature raise posing safety risks to all your food.
