With the capacity for up to five full trays (not included) you can use this machine to prepare dishes earlier in the day or the day before, allowing staff ample time to prepare other dishes as well as attend to service and maintenance duties. Using a clever undermount design this unit draws in cooler air from the ground, allowing the unit to operate in higher ambient temperatures and more crowded spaces.
