Product Description
The Mono Eco is a forced-air convection oven designed for professional bakery and foodservice kitchens. It replaces Mono's long-established Classic range and accepts four or five trays depending on configuration. The right-hand hinged door suits kitchens where workflow moves from right to left, and the three-phase supply makes it well suited to sites already running commercial-grade electrical infrastructure. Control is handled through a 7-inch colour touchscreen, which stores up to 100 programmes and gives clear access to temperature, time, steam injection, and damper settings — useful in bakery environments where those four variables change frequently across different product types.
In a busy production kitchen the ability to recall saved programmes quickly is a genuine operational advantage. Operators baking across multiple product lines can move between croissants, bread rolls, and pastries without manually resetting parameters each time. The steam injection function helps with crust development and dough lift, while the adjustable damper gives control over humidity within the chamber during the bake. Recovery between loads is supported by the 7.5kW element, which helps maintain consistent chamber temperatures during back-to-back baking sessions.
From a day-to-day operational standpoint, the Eco range includes a number of features that reduce both running costs and risk:
- Sleep mode returns the oven to standby temperature between production runs, reducing energy draw
- Auto shutdown prevents the oven being left on unintentionally at the end of service
- LED door lighting consumes less energy than conventional bulbs and gives a clear view of product without opening the door
- Full-length toughened glass door allows product monitoring throughout the bake
- Touchscreen interface reduces reliance on operator memory for repeat programmes
Installation requires a three-phase supply, which should be confirmed before ordering. At 110kg the unit needs careful positioning and adequate floor loading — this is not a lightweight counter-top oven. Stands are not included with the unit but compatible options are available separately under the accessories tab. The footprint is broad, so measure the intended space carefully, particularly if the oven is to be stacked or positioned alongside other equipment.
The Mono Eco in this configuration is well suited to artisan bakeries, hotel kitchens, school catering operations, and contract caterers with a regular pastry or bread programme. If your site runs continuous high-volume production across extended shifts, a larger-capacity model from the range may be worth considering. Equally, if three-phase supply is not available, a single-phase variant exists within the Eco range.
If you're unsure whether this model matches your production volumes or site supply, we're happy to talk it through before you commit to an order.

Frequently Asked Questions
- This model requires a three-phase electrical supply, so it is important to confirm your site has the correct infrastructure before ordering. If three-phase is not available, Mono does produce single-phase variants within the Eco range that may be more appropriate for your installation.
- It works well in bakeries, hotel kitchens, school catering facilities, and contract catering operations that run a regular programme of bread, pastry, or similar baked goods. Sites with continuous high-volume output across long production shifts may find a larger-capacity model from the range better matched to their throughput requirements.
- Steam injection is particularly valuable for products that benefit from a moist baking environment early in the cycle — such as crusty bread, baguettes, and certain pastries — as it supports oven spring and crust development. For products that require a dry bake throughout, the steam function can simply be left off, and the adjustable damper gives further control over humidity levels within the chamber.
