The Designline HBM5 is a five-position drop-in dry heat bain marie designed for self-service countertop installations. It sits flush into a pre-formed cutout in a serving counter and provides both base heat and overhead surface heat to maintain pre-cooked food at the correct holding temperature throughout the service period. It is not a cooking appliance — its role is to protect food that has already been cooked and hold it safely for service.
The unit uses infrared quartz heat lamps mounted in an elliptical overhead gantry to provide radiant surface heat, working in combination with heated wells beneath the gastronorm containers. Individual container support collars in the well accept various GN sizes down to 150mm deep, which gives kitchen teams some flexibility in how they configure the display across a service. The modular heater element covers in the well distribute heat evenly across the base and can be lifted out for cleaning, which matters on a unit that will see daily food residue. The self-service superstructure includes curved, toughened glass sneeze screening on the customer side, keeping exposed food within hygiene requirements without obscuring it.
