It is not a replacement for a commercial dishwasher, but rather the part of the pot wash setup that handles what a dishwasher cannot.
In practice, a double basin configuration gives the pot wash team a proper workflow: one basin for soaking and one for rinsing, or one dedicated to a particular category of item. During a busy service, this separation matters. A single sink quickly becomes a bottleneck when large items are queued up; the additional basin keeps the cycle moving.
