In a busy bar or restaurant environment, that continuity matters. Glasses go into the rack dirty, through the glasswasher in the rack, out onto the shelf in the rack, and back to the service point in the rack. There is no intermediate transfer step, which reduces handling time, breakage risk, and the chance of contamination between wash and service.
