The unit uses a combination of base heat from the well and infrared quartz lamps in the overhead gantry to maintain food temperature and surface presentation simultaneously.
In service, the HBM4 performs reliably across long trading windows — it is factory set to hold food core temperature at 85°C and the range extends to 110°C, giving operators flexibility for different menu items. The quartz lamp gantry provides both illumination and radiant surface heat, which helps retain food quality and presentation during extended display periods.
