The Kubus KHBM5 is a drop-in dry heat bain marie designed to hold and display pre-cooked food at serving temperature within a built-in countertop. It accommodates five full 1/1 GN containers, supported by individual collar frames that accept containers up to 150mm deep. Infrared quartz heat lamps mounted in the elliptical overhead gantry provide both surface radiant heat and illumination, while a heated base well maintains temperature from below. The result is a dual-source heating arrangement that keeps food at a consistent core temperature throughout a service period.
In a busy service environment — carveries, school catering, staff restaurants, and self-service hospitality operations — consistent holding temperature is critical. The KHBM5 is factory set to hold food core at 85°C and can be adjusted up to 110°C. Both the base heat and the lamp intensity can be independently set and locked by the operator via a digital control panel and dimmer switch positioned at eye level on the operator side of the gantry. That level of control reduces the risk of temperature drift during extended service and allows staff to dial in settings without reaching across the display. The unit is rated for 24-hour operation, which suits venues running extended or continuous service.
