Product Description
The Moffat D2BM range is a series of dry heat drop-in bain-marie units designed to be installed into existing or custom-built counter structures. Rather than requiring a purpose-built servery counter, these modules are engineered to drop into the surface of almost any counter material — stainless steel, granite, marble, timber, tiled or solid surface finishes such as Corian. This makes them a practical choice for operators who are fitting out a new servery or upgrading an existing one without replacing the entire counter infrastructure.
Dry heat bain-maries use a self-contained heating cell rather than a water bath, which simplifies day-to-day operation and reduces maintenance compared with wet heat alternatives. The heating approach is well suited to holding pre-heated foods at safe service temperatures during busy periods. For overhead holding and presentation, certain models in the range incorporate gantry-mounted halogen heat lamps, which help maintain food temperature from above while also keeping the display visible and appealing to customers.
From an operational standpoint, the key practical advantages are:
- Drop-in installation removes the need for a fully integrated or bespoke counter build
- Dry heat operation means no water management, reducing daily servicing demands
- Units arrive ready to connect via a standard 13A plug, minimising installation complexity
- Gantry glass on SL models is supplied flat-packed for on-site assembly, allowing delivery into tight spaces
- Compatible with a wide range of counter materials and existing servery layouts
Installation is straightforward for most counter builds, but it is worth confirming the cut-out dimensions and counter thickness before ordering. The height above the work surface varies across the model variants, and gantry clearance needs to be factored into the counter design — particularly in lower-ceilinged servery areas. Pans are not included with any model and will need to be sourced separately. Units are supplied with a 13A plug and cable, so no hardwiring is required, though local electrical regulations should always be observed.
This range is well suited to cafeterias, hotel breakfast operations, staff restaurants, and any buffet or servery environment where a clean, integrated counter appearance is important. It works best where a reliable dry-heat holding solution is needed and a water-based system would add operational complexity. Operators needing higher-capacity or higher-throughput holding solutions may find a heavier-duty alternative more appropriate for very high-volume service.
If you are unsure which variant suits your counter depth, service volume or servery layout, our team is happy to talk through the options with you before you place an order.

Frequently Asked Questions
- A dry heat bain-marie uses a self-contained heating element to hold food temperature without the need for a water bath. This generally reduces day-to-day maintenance — there is no water level to monitor or risk of limescale build-up — and it can be a simpler solution for operators holding pre-heated foods in a busy servery environment. Wet heat models tend to provide more even, gentle heat distribution and may be preferable for certain food types, so it is worth considering your menu before deciding.
- The D2BM units are supplied with a 13A plug and cable, so no hardwiring is required, and the drop-in design is intended to simplify fitting into an existing counter surface. However, accurate cut-out dimensions are essential, and you will need to confirm that your counter material and structure can accommodate the unit's weight and installation requirements. We recommend checking all dimensions and counter specifications carefully before ordering, and speaking with a qualified installer if you are unsure.
- Gantry height varies across the D2BM variants, and some models add a significant amount of height above the counter surface. In servery areas with lower ceilings or overhead extraction canopies, this is an important dimension to verify before specifying a gantry model. If you can share the details of your servery layout, we can help you identify which variant is most likely to work within your available space.
