The Rational iCombi UltraVent is a recirculation canopy designed to sit directly on top of compatible Rational iCombi ovens in the 62 and 102 size configurations. Rather than routing steam and cooking vapours out through the building fabric via a duct run, the UltraVent captures exhaust from the oven's top vent and from the door opening, filtering and condensing it internally before returning air to the kitchen. It connects directly into the oven's sensor system, so the canopy responds automatically during operation and whenever the door is opened mid-service.
For kitchens running combi ovens heavily on steam functions — poaching, steaming, sous vide finishing, or regeneration cycles — this means the resulting vapour is managed at source rather than dispersing across the kitchen. The canopy handles both the steady exhaust from the oven's top vent and the burst of steam released each time the door is opened during a busy service.
