Product Description
The Designline HBM3 is a drop-in dry heat bain marie designed to sit flush within a fabricated countertop, providing a customer-facing hot food holding display for pre-cooked items. It accommodates three full 1/1 GN containers across its heated well, with individual support collars that accept containers up to 150mm deep. A curved toughened glass sneeze screen runs along the customer side, while overhead infrared quartz lamps provide both illumination and radiant heat — helping food maintain temperature and presentation simultaneously during service.
The unit is factory set to hold food at 85°C, with the temperature adjustable up to 110°C. Base heat and overhead lamp intensity are controlled independently from a panel mounted at eye level on the gantry, on the operator side, so adjustments can be made mid-service without affecting the display. The unit is rated for 24-hour operation, which suits venues running extended service periods or multiple sittings across the day.
From an operational standpoint, the HBM3 offers several practical advantages for counter-based service:
- Independent base heat and lamp controls allow fine-tuning during service without disrupting the display
- Removable heater element covers in the well make end-of-service cleaning more manageable
- Individual GN collars accept mixed container depths within the same well
- Polished steel and aluminium profiles give a clean, durable finish suited to customer-facing counters
- Supplied with a concealed control box and plug-top on a 2m lead, simplifying initial connection
Installation requires a pre-formed cutout in the countertop to precise dimensions, so this needs to be coordinated with counter fabrication before the unit arrives. A lifting kit is included. The plug-top supply is straightforward, but cutout tolerances and counter construction are worth confirming with your installer in advance. At 44kg, the unit is manageable with two people during fitting but is not intended to be repositioned once set into a counter.
The HBM3 is well suited to carvery operations, hotel buffet counters, staff restaurants, and self-service environments where pre-cooked food needs to be held and presented at the point of service. It works best where a fabricated or modular counter is already in place or being built to specification. For sites with higher throughput or a need for a wider display run, it is worth considering whether a larger unit would better match the service volume before the cutout dimensions are committed.
If you are planning a counter build or want to talk through how this unit fits within your service setup, our team is happy to help before you confirm your order.

Frequently Asked Questions
- The unit connects via a standard plug-top on a 2m lead, so it does not require a dedicated hardwired supply. That said, it is worth confirming your counter build includes adequate cable routing and that the socket position is accessible once the unit is dropped in, as repositioning after installation is not straightforward.
- Yes — the HBM3 is rated for 24-hour continuous operation, which makes it practical for venues running back-to-back sittings or extended service periods. The independent base heat and overhead lamp controls also allow operators to adjust holding conditions between service periods without powering the unit down.
- The counter needs a pre-formed cutout machined to the unit's specific dimensions before delivery — this has to be coordinated with your counter fabricator in advance. A lifting kit is supplied with the unit. Beyond the cutout, you need a standard socket in a suitable position and sufficient clearance above the gantry for the sneeze screen and lamp assembly.
