The Global G-16 is a 25.4cm chef's knife from Global's G series, manufactured in Japan from Molybdenum-Vanadium 18 stainless steel. This high-chromium alloy is chosen for its ability to hold a keen edge through the demands of daily kitchen use — including exposure to acidic ingredients, frequent washing, and the general pace of a working brigade.

The longer blade makes the G-16 a practical choice for volume prep: breaking down larger cuts of meat, working through dense root vegetables, or any task where a shorter blade becomes a limiting factor.
