Unlike a wet bain marie, it requires no water connection — heat is delivered through the base well and supplemented by an overhead quartz lamp gantry that provides both radiant surface heat and illumination simultaneously.
In service, the HBM4 performs reliably across long trading windows. Factory set to hold food core temperature at 85°C with a range extending to 110°C, it gives operators flexibility for different menu items without manual intervention mid-service.
