Product Description
The Rational iCombi UltraVent is a recirculation canopy designed to sit directly on top of compatible Rational iCombi ovens — specifically the 62 and 102 models. Rather than ducting steam and cooking vapours out through the building envelope, the UltraVent captures exhaust from the oven's top vent and from the door opening, filtering and condensing it internally before returning air to the kitchen. It connects directly to the oven's sensor system, so the canopy responds automatically during operation and when the door is opened.
In practice, this means kitchens that run combi ovens heavily on steam functions — poaching, steaming, sous vide finishing, or regenerating — can manage the resulting vapour without clouds of steam dispersing across the kitchen. The canopy handles both the continuous exhaust from the top of the oven and the burst of steam released each time the door is opened during service. For operations where the primary workload is steaming rather than high-temperature roasting or grilling, this version of the UltraVent is typically well suited.
The main operational advantages are straightforward:
- No requirement for a duct run to the outside — removes a significant installation barrier
- Integrates directly with the oven's own controls via internal sensors
- Reduces steam in the kitchen environment, improving comfort and reducing condensation on nearby surfaces
- Carbon and multi-layer filtration captures cooking odours as well as moisture
- Can be retro-fitted to an existing installation at any point
Because the UltraVent uses replaceable CNS carbon filters alongside additional filter layers, ongoing maintenance is limited to periodic filter changes. There are no external ventilation connections to maintain, and no structural penetrations required. It is worth noting that this standard version of the UltraVent is optimised for steam-led cooking profiles. Kitchens with a significant proportion of grilling, roasting, or high-fat cooking cycles may find the Plus variant — which carries additional filters for smoke and vapour — better suited to their workload.
This canopy is compatible with Rational iCombi models in the 62 and 102 size configurations. If you are unsure which version of the UltraVent fits your cooking profile, or whether your existing installation would support it, our team is happy to talk it through before you commit to a purchase.

Frequently Asked Questions
- The standard UltraVent is optimised for steam-led cooking profiles and handles moisture and general cooking odours well. If your combi oven is regularly used for high-temperature roasting, grilling, or fat-intensive cooking, Rational's Plus version of the UltraVent includes additional filtration designed for smoke and heavier vapours, and may be the more appropriate choice.
- No — one of the key practical advantages of the UltraVent is that it operates entirely through internal recirculation and filtration, with no need for a duct run to the outside. This makes it viable in locations where running external extraction would be impractical, expensive, or structurally disruptive.
- Filter replacement intervals depend on the volume and type of cooking, but the process itself is designed to be straightforward — the CNS carbon filters and additional layers are replaceable without specialist tools or extended downtime. Rational can advise on expected replacement frequency based on your typical cooking pattern.
