Hot Holding Done Properly, Keeping Food Safe at 63 Degrees

Hot holding is one of the simplest food safety rules to state and one of the easiest to get wrong in practice. Food that has been cooked and is being kept warm for service must stay at 63 degrees Celsius or above, and the equipment doing that job has a specific purpose that is different from the oven or grill that cooked the food in the first place.

This guide sets out what the rule actually requires, when the well known two hour exemption applies, the difference between dry and humidified holding, and how a sensible programme of probe checks and records keeps you on the right side of an inspection. The 63 degree rule and the two hour exemption

Food Standards Agency guidance sets 63 degrees Celsius as the minimum core temperature for hot held food. Below that, bacteria that survived cooking or were introduced during handling can begin to multiply again, and the longer food sits in the danger zone the greater the risk. The rule applies from the moment food leaves the cooking process and enters hot holding, whether that is a bain marie on a servery or a heated cabinet waiting for a function.

The FSA does allow a limited exemption: food can be held below 63 degrees for a single period of up to two hours, provided it is only used once for this purpose and is either sold, consumed or discarded at the end of that window. It is not a licence to run holding equipment cold as standard practice. It exists for genuine one off situations, not as a way to manage equipment that cannot reach temperature reliably.

Dry holding against humidified holding

Not all hot holding equipment works the same way, and the choice affects both food quality and how easy it is to hold temperature consistently. Dry holding cabinets circulate heated air around the cabinet, which suits items like pies, pastries and pre-plated meals where moisture loss is less of a concern. Probe checks and records

Reaching 63 degrees once at the start of service is not the same as holding it. Records matter as much as the checks themselves. A simple log showing what was checked, when, and the temperature recorded gives you evidence if a customer or an inspector ever questions food safety on a given day. Using them for that purpose risks long periods in the danger zone before the food ever reaches 63 degrees.
