Turbofan and Other Holding Ovens

The Spidocook Caldolux is a static cook and hold oven designed for low-temperature cooking followed by an extended holding phase. It operates as a single continuous cycle — cooking at controlled temperatures up to 120°C, then transitioning automatically into a gentle hold at up to 100°C. The unit accommodates three 1/1 GN trays, making it practical for batch preparation of proteins, roasts, and temperature-sensitive dishes where consistency and yield matter.

In a working kitchen, the Caldolux earns its place most clearly with overnight or extended cook cycles. Joints of meat loaded in the evening can be cooked low and slow through the night and held at safe serving temperatures ready for the lunch or dinner service — with minimal staff intervention. Because the oven cooks at lower temperatures than a conventional convection oven, shrinkage is reduced and moisture retention improves, which has a direct effect on food yield and portion consistency across a busy service period.

The practical advantages this brings to a kitchen operation include:

• Reduced active cooking time during peak service — product is ready and held
• Improved yield from expensive protein cuts through low-temperature method
• Consistent, repeatable results between services and between staff
• Frees up conventional oven capacity during service
• Digital controls allow simple temperature and time programming

Installation is straightforward — the unit runs from a standard 13A supply and requires no specialist gas or ventilation connection. Its compact footprint means it will sit comfortably on a counter or on a suitable stand. At 21kg it can be repositioned without difficulty, though it should be placed on a stable, heat-resistant surface with reasonable clearance at the rear and sides.

The Caldolux is best suited to smaller restaurants, pub kitchens, hotel operations, and catering businesses where extended low-temperature cooking is part of the regular workflow. It is particularly well matched to operations that cook ahead and want to hold product safely through a service period rather than cooking to order. For sites with significantly higher batch volumes or a need to run multiple simultaneous cycles, a higher-capacity model would be worth considering.

If you are unsure whether this unit fits your kitchen's throughput or workflow, our team is happy to talk through the options with you before you commit.

The Blue Seal Turbofan H10D is a 10-tray electric holding cabinet designed to maintain large volumes of plated or gastronorm food at a consistent service temperature without further cooking. It accepts ten full 1/1 GN trays with generous tray spacing, making it a practical choice for kitchens that need serious holding capacity within a relatively compact footprint.

In a busy service environment, holding food reliably is as critical as cooking it well. The H10D uses a low-velocity fan to circulate warm air gently and evenly throughout the cabinet. This approach avoids the surface drying that can affect food held in static units, and it supports kitchens running back-to-back services or bridging the gap between production and service — keeping quality consistent without constant replenishment from the kitchen.

From an operational standpoint, the cabinet offers several practical advantages:

• Digital temperature and timer controls allow precise management of holding conditions across different food types
• Three independent hold timers support multi-product service operations
• Continuous door seal and double-skin construction retain heat efficiently, supporting lower running costs over long service periods
• Dual interior halogen lamps allow food inspection without opening the door
• Designed to stack directly with the Blue Seal Turbofan E33D convection oven for integrated cook-and-hold workflows

The H10D is a self-contained electric unit, so installation is generally straightforward — it requires a suitable power connection and adequate ventilation clearance around the cabinet. Where a stacked oven-and-holding configuration is planned, operators should confirm surface load-bearing capacity and access requirements before installation, as combined unit weight is a practical consideration.

This cabinet is well suited to restaurants, hotels, contract caterers, and event catering operations that need reliable high-capacity holding within a modest footprint. It works as a standalone unit or as part of the Turbofan cook-and-hold system. For very high-volume sites holding across multiple service zones simultaneously, it is worth exploring whether a larger-capacity solution would be a better fit.

If you would like to talk through whether the H10D suits your service volumes and kitchen layout, our team is glad to help.

The Blue Seal Turbofan H10D-FS is a full-size electric holding cabinet designed to keep cooked food at consistent serving temperatures throughout a busy service. It takes ten full-size sheet pans and sits within Blue Seal's Turbofan platform — a range that has built a reliable reputation in professional kitchens where sustained daily use is the norm rather than the exception.

In high-volume operations, holding capacity is often the quiet bottleneck that disrupts service flow. The H10D-FS gives larger kitchens meaningful hold space without tying up oven capacity or relying on makeshift alternatives. The double-skin cabinet construction supports stable internal temperatures, while digital controls and three independent hold timers allow kitchen teams to monitor conditions accurately and manage food rotation in line with HACCP requirements.

From a practical standpoint, the cabinet offers several advantages worth noting:

• Digital temperature and timer displays allow quick checks during busy service without interrupting workflow
• Three independent timers support food safety rotation across different menu items
• Double-skin construction helps hold temperature steadily without excessive energy draw
• Designed to stack with Turbofan E32 convection ovens for integrated cook-and-hold setups
• Equally practical as a stand-alone unit where stacking is not required

Installation is straightforward — the unit runs on an electrical supply and requires no gas or water connections. That said, the footprint is substantial, and floor space, clearance, and workflow positioning should all be assessed before the cabinet arrives. If stacking with an E32 is planned, the combined height and the structural capacity of the surface or stand are worth confirming in advance.

The H10D-FS is best suited to high-volume catering kitchens, large restaurant and hotel operations, event catering companies, and institutional foodservice environments where holding significant quantities of food between cooking and service is a routine daily requirement. Kitchens with more modest throughput may find a smaller-capacity model within the Turbofan range a more practical fit, while particularly large or complex operations may benefit from a broader conversation about how holding capacity integrates with the rest of the kitchen.

If you are unsure whether this cabinet matches your service volumes or want to think through how it would sit within your current setup, the team is glad to talk it through before you commit.

The Blue Seal Turbofan H8D-FS-UC is an electric undercounter hot holding cabinet designed to keep plated dishes and prepped food at a consistent, safe temperature throughout service. It takes eight full-size sheet pans within a compact footprint, making it a practical option for kitchens where floor or bench space is limited but reliable holding is still essential.

During busy service, maintaining stable cabinet conditions matters as much as cooking performance. The H8D-FS-UC uses electronic temperature control to hold steady across the full holding range, helping food quality remain consistent from the first cover to the last. Three independent hold timers allow different menu components to be tracked at the same time, which is particularly useful when running items with varying hold requirements alongside one another.

From an operational standpoint, the practical advantages include:

• Digital controls support consistent, repeatable settings across different shifts and operators
• Three simultaneous hold timers allow better management of varied menu items during service
• Undercounter height fits neatly beneath existing pass or prep counters without disrupting workflow
• Continuous door seal helps maintain internal temperature when the cabinet is opened repeatedly during service
• Double-skin construction aids heat retention and keeps external surface temperatures manageable

Installation requires no specialist electrical work. The unit is plug-in, running from a standard socket, and needs no water connection or dedicated ventilation. It is also designed to stack with the Turbofan E32D convection oven range, making it a natural pairing if that oven is already part of your kitchen setup.

This cabinet is well suited to cafés, restaurants, school kitchens, and contract catering operations that need dependable food holding in a tight footprint. It is best matched to sites with moderate holding demand at a single service point. Where larger volumes or multiple holding positions are required, a full-height freestanding cabinet may be a more appropriate fit.

If you would like to talk through whether this unit suits your service setup or how it sits alongside other equipment on your line, the team is glad to help before you make a decision.

The Blue Seal Turbofan H8D-UC is a compact undercounter hot holding cabinet designed to keep prepared food at safe serving temperatures throughout a service period. It holds up to eight full-size gastronorm trays and is built to sit beneath a standard counter bench, either as a standalone holding unit or paired directly beneath a Turbofan E33 convection oven as part of an integrated cooking and holding system.

In a working kitchen, the H8D-UC earns its place by keeping food consistent and service-ready without consuming worktop space. The low-velocity circulation fan distributes warmth evenly across the cabinet without drying out food — a common frustration with holding equipment that relies on static heat alone. Digital controls give operators clear visibility of temperature and elapsed holding time, and three independent hold timers allow different menu items to be tracked simultaneously, which is genuinely useful during a busy service when multiple dishes are being held at once.

For kitchen teams, the practical advantages are straightforward:

• Frees oven and worktop space during service without compromising food quality
• Three independent timers allow simultaneous tracking of different menu items
• Low-velocity fan maintains moisture balance and reduces surface drying
• Compact undercounter footprint suits kitchens where space is limited
• Continuous door seal supports consistent temperatures throughout service

Installation is uncomplicated — the unit runs from a standard 13A plug connection with no dedicated electrical supply, gas, or water connections required. It fits beneath a standard counter bench height and double-skin construction helps keep exterior surfaces at a safe temperature during operation. Ventilation requirements are minimal, making it straightforward to position within an existing kitchen layout.

This cabinet is well suited to cafés, small to mid-sized restaurants, contract catering operations, and workplace or school canteens where a reliable, compact holding solution is needed without the footprint of a floor-standing unit. It works particularly well in kitchens already running a Turbofan E33 oven, where the two units function together as a matched system. For higher-volume sites holding larger quantities across multiple service lines, a greater-capacity unit may be worth considering.

If you'd like to talk through whether this cabinet fits your service volumes or existing bench configuration, our team is glad to help before you commit to an order.

The Hatco FSHC-6W1 Flav-R-Savor is a portable heated holding cabinet designed to bridge the gap between batch cooking and service. It combines thermostatically controlled heat with active humidity management to hold prepared food at safe, consistent temperatures over extended periods — addressing one of the more persistent quality problems in batch-cook operations, where food drying out in holding is as damaging to the finished plate as a temperature compliance failure.

The humidity management is what separates this unit from a conventional heated trolley. Dry heat degrades proteins quickly — roasted meats, poultry joints, and similar dishes lose moisture noticeably within a short holding window. By managing the holding environment rather than simply applying heat, the Flav-R-Savor supports better food quality across a full service period. This matters most in carveries, banqueting operations, and high-volume lunch services where holding times regularly extend beyond what standard equipment handles well.

Several practical features support day-to-day use in busy operations:

• Top-mounted controls and digital temperature display allow straightforward adjustment during service
• Reversible glass doors offer flexible positioning on a pass or in a servery
• Large swivel castors with wheel locks make repositioning easy and secure during service
• Insulated side walls support temperature stability and efficient energy use
• Plug-in connection removes the need for a hardwired electrical installation

Being a plug-in unit, installation is relatively straightforward, though a water supply will be needed nearby for filling the humidity reservoir, and adequate clearance for door swing and air circulation should be factored in. The compact footprint suits tighter servery and pass environments. Sites managing larger volumes across multiple simultaneous loads should consider whether a higher-capacity model would be a better match for the demand.

This cabinet is well suited to hotels, contract caterers, pub kitchens, event catering operations, and schools or care sector kitchens where holding temperature compliance is a regulatory requirement as much as a quality consideration. It works particularly well where food is batch-cooked ahead of a defined service window rather than cooked continuously to order.

If you would like to talk through whether this unit is the right fit for your holding volumes and workflow, the team is happy to help you work it through.
