It uses vitro-ceramic infrared elements arranged across two heating zones and can be run with the top elements only — replicating conventional overhead salamander use — or with both top and bottom elements active, delivering radiant heat from both sides for faster, more even results. The infrared elements reach working temperature quickly, which is useful when starting from cold or recovering between batches during a busy service period.
