Choosing a Combi Oven for a Busy Commercial Kitchen

A combi oven is often the single biggest investment in a commercial kitchen, and the biggest source of regret when it is chosen on price alone. Get the size, steam type and services right and one unit can genuinely replace an oven, a steamer and part of your grill section. Get it wrong and you end up with a machine that is either straining every service or standing half empty and costing more to run than it should.

This article sets out the practical questions to work through before you specify a combi oven, from covers and tray capacity to boiler versus injection steam, connected services, cleaning and water treatment.

Sizing by covers and tray capacity

The starting point is not the oven, it is the menu and the service pattern. Count how many covers you need to produce in your busiest hour, then work out how many trays of your typical dishes that means, whether that is gastronorm containers of vegetables, trays of plated mains, or racks of bread. Combi ovens are sold by tray capacity, usually expressed as a number of 1/1 or 2/1 gastronorm positions, and this is the figure that actually determines whether you can cook a service in one load or three.

It is easy to undersize a combi because the specification sheet looks generous next to a single day's prep. The problem shows up on the busiest Saturday of the year, not on a quiet Tuesday. Kitchens that batch cook, run large banqueting covers, or handle overnight cooking benefit from sizing up a tray count rather than sizing to the average.

Boiler steam against injection steam

Combi ovens generate steam in one of two ways. Boiler based systems produce steam from a dedicated boiler chamber, which tends to suit kitchens doing heavy, sustained steaming, such as high volume vegetable prep or bulk regeneration, because steam output stays consistent under load. Injection systems spray water directly onto a heating element or fan, which gives a faster response and is generally easier to descale, and suits kitchens with a broader mixed menu rather than continuous steaming.

Neither is universally correct. The right choice depends on your water hardness, your service pattern and how much of your output is steam heavy versus dry roasting or baking. It is worth asking a supplier to talk through both types against your actual menu rather than picking on brand reputation alone.

Connected services and installation

Combi ovens are demanding on services. Electric models need a substantial three-phase supply, gas models need adequate gas pressure and flueing, and almost all models need a water supply and drainage for steam generation and cleaning cycles. Ventilation extraction has to cope with steam and heat load, not just the smoke and grease profile of a fryer or grill.

Most combi ovens now include an automatic cleaning cycle, and this is not a luxury feature. A build-up of grease and mineral scale inside the cabinet reduces cooking performance, increases energy use and shortens the working life of the oven. Automatic cleaning cycles need to be run properly and consistently, which means training staff to use them rather than skip them at the end of a long shift.

Water treatment is just as important, particularly with boiler steam systems in hard water areas. Untreated water leads to scale build-up in the boiler and steam lines, which is one of the most common causes of combi oven breakdowns and costly descaling call-outs. A water softener or filtration unit sized correctly for the oven and the local water hardness is not an optional extra, it is part of specifying the oven properly.

Where one combi replaces three appliances, and where it does not

A well specified combi can genuinely replace a convection oven, a steamer and, for some dishes, part of a grill or bratt pan, which is why so many kitchens standardise on one. It suits menus built around roasting, steaming, braising and regeneration, and it earns its keep fastest in kitchens with high covers and a repeatable menu.

It does not replace equipment doing high volume frying, griddling with a seared crust, or continuous high speed banqueting service across several sections at once. Kitchens with those demands still need dedicated equipment alongside the combi. The honest answer is that a combi oven consolidates a lot of cooking, but it is not a replacement for every piece of equipment in the kitchen.
