Gas or Electric Cooking Ranges, What Suits Your Kitchen

Choosing between gas and electric for a new cook line is not a matter of taste, it decides how the rest of the kitchen gets built around it. The decision affects running costs, how hot the kitchen gets to work in, how much extraction the canopy needs to shift, how quickly the equipment responds when a chef needs it to, and how much power the site can actually bring in.

Get it right and the kitchen runs cooler, the extraction system is sized sensibly, and the electrician or gas engineer only has to visit once. Get it wrong and you are living with the compromise for the next fifteen years, whether that is an undersized supply, an oversized extraction run, or a station nobody wants to stand next to on a hot afternoon.

Running costs and heat in the kitchen

Gas burns hot and a good deal of that heat radiates outward rather than into the pan, which is why a gas-heavy line pushes ambient kitchen temperature up over a service. Electric and induction put more of the energy directly into the food, so the kitchen around the cook line tends to stay cooler, which matters for staff comfort and for anything stored nearby that is heat sensitive.

A gas chargrill is a good example of where this trade-off is most obvious. Controllability, from flame to induction to pan tilt

Gas gives instant visual feedback and chefs who trained on it tend to trust it instinctively, but the heat is harder to control precisely because the flame itself does not change temperature, only the amount of it reaching the pan. Induction responds within a second or two of the dial being turned, and because the heat is generated in the pan base rather than around it, there is very little residual heat once the power is cut, which also helps with the running cost picture above.
