Matfer Bourgeat
Matfer Bourgeat Exoglass Bread Mould 283mm
£35.69(£42.83 inc VAT)
The Matfer Bourgeat Exoglass bread mould is a professional baking mould designed for consistent, high-volume bread production in commercial kitchens. Made from Matfer's proprietary Exoglass composite material, it offers a practical alternative to traditional tinplate or silicone moulds, combining the rigidity of a solid mould with good release properties and durability suited to daily production schedules.
In a working bakery or kitchen environment, the Exoglass material performs reliably across repeated bake cycles. Unlike metal moulds that require regular greasing and seasoning, Exoglass moulds release cleanly without greasing in most applications, which reduces preparation time during busy production runs. The material also resists warping and deformation over time, which matters when consistent loaf shape is important for portioning or presentation.
From an operational standpoint, this mould offers a number of practical advantages:
- Non-stick release without greasing reduces prep time and ingredient waste
- Unbreakable composite construction withstands the demands of daily commercial use
- Retains its shape reliably, ensuring consistent loaf dimensions batch after batch
- Dishwasher safe, supporting efficient kitchen cleaning routines
- Stain-resistant material maintains appearance with regular use
The mould is dishwasher safe, which fits well into kitchens where throughput demands fast turnaround between services. At 283mm in length, it is suited to standard loaf production for restaurant bread services, hotel breakfast operations, or small-to-medium bakery outputs. It is not designed for very high-volume automated production lines, where purpose-built industrial bakeware would be more appropriate. Operators producing larger quantities may find it more practical to purchase multiple moulds rather than rely on a single piece.
This mould is well suited to restaurants, hotels, contract caterers, and artisan bakeries producing bread in-house on a daily basis. If you are equipping a larger production kitchen and need guidance on quantities or compatibility with your existing baking setup, we are happy to help you work through the requirements.

Frequently asked questions
Does this mould need greasing before use?
In most applications, Exoglass moulds do not require greasing before baking, which is one of their practical advantages over traditional tinplate. However, Matfer note that grooved variants may benefit from initial greasing, so it is worth checking the specific product finish if you are using a patterned mould.
Is this mould suitable for a high-volume bakery producing large quantities daily?
This mould is well suited to restaurants, hotels, and smaller production kitchens baking bread in-house as part of their daily service. For sites producing at significant industrial scale or using automated depositing and handling equipment, purpose-built heavy-gauge bakeware would be a more appropriate fit. If you are unsure which category your operation falls into, we can help you assess the right approach.
Can this mould be used in a commercial convection oven?
Exoglass is designed for commercial oven use and performs well in convection environments. As with any bakeware, it is worth confirming the maximum operating temperature of your specific oven against the manufacturer's guidance for the material, particularly if you are operating at very high temperatures.
