Roasting and Baking Dishes

This is a straightforward cast iron roasting dish from Vogue, finished in black with a cream enamelled interior. At 3 litres capacity, it sits in a practical mid-size range — large enough for roasting joints, root vegetables, or oven-baked dishes for multiple covers, without being unwieldy to handle during a busy service.

Cast iron performs well in commercial kitchen environments because of the way it handles and retains heat. Once the dish is up to temperature, it holds that heat consistently across the base and sides, which helps with even cooking and means food stays warmer for longer when held or brought to the pass. It is compatible with all heat sources — gas, electric, ceramic top, and induction — which makes it a flexible addition to any kitchen regardless of the hob setup.

The enamelled interior is worth noting from an operational standpoint. A properly maintained enamel surface resists rust, makes cleaning more straightforward than bare cast iron, and reduces the need for seasoning. Key practical points for kitchen operators:

• Works across gas, electric, induction, and ceramic hob types
• Retains heat well, helping food stay at temperature before serving
• Enamelled interior is easier to clean and maintain than bare cast iron
• Oven-safe construction suitable for hob-to-oven use
• Weighs 3.7kg — heavier than aluminium or stainless equivalents at this size

The weight is worth bearing in mind. At 3.7kg empty, this dish is noticeably heavier than comparable stainless or aluminium cookware. For most kitchen environments this is not a problem, but it is something to consider if staff are handling multiple dishes in quick succession or if there are manual handling considerations in your operation.

This dish is well suited to smaller professional kitchens, gastropubs, boutique hotels, and catering operations where cast iron cookware fits the cooking style or front-of-house presentation. For higher-volume operations requiring larger batch sizes or faster turnaround, a larger capacity dish or a different material may be more appropriate.

If you are unsure whether this size fits your menu or service volume, our team is happy to talk it through with you.

This is a traditional cast iron roasting dish with a cream enamelled interior, supplied in black. At 5 litres capacity it sits in the mid-range of roasting dish sizes — large enough for a substantial joint or a full batch of root vegetables, without being unwieldy in day-to-day service.

Cast iron performs consistently well in commercial environments because of the way it holds and distributes heat. Once the dish is up to temperature, it maintains that heat across the entire base and sides rather than concentrating it at the point of contact. This is particularly useful when moving between oven and hob, finishing a dish at the pass, or holding food during a busy service period. The thermal mass also means the dish retains warmth after it leaves the oven, which reduces the risk of food cooling on the counter before plating.

The enamelled interior means the dish does not require seasoning in the same way an untreated cast iron pan would, which makes it more practical in a kitchen where multiple staff handle equipment. The enamel also makes cleaning more straightforward and avoids the rust concerns associated with bare cast iron.

• Compatible with gas, electric, induction, and ceramic ranges — no dedicated equipment required
• Heat retention supports energy-efficient cooking and reduces the need for re-heating
• Enamelled surface is easier to maintain than raw cast iron in a multi-user environment
• Robust construction suited to regular use in a professional kitchen

It is worth noting that at just under 5kg empty, this dish is heavier than pressed steel or aluminium alternatives. Staff handling it frequently — particularly when full — should be aware of the additional weight. It is well suited to smaller restaurant kitchens, pub kitchens, and catering operations where roasting and braising form a regular part of the menu.

If you are unsure whether this size is right for your service volumes or want guidance on the range, we are happy to help.

This Pyrex rectangular glass roasting dish is a straightforward, multi-purpose piece of cookware suited to a range of light-duty commercial and hospitality applications. Made from borosilicate-style glass with high thermal shock resistance, it moves reliably between temperature extremes without the cracking risk associated with standard glass.

In a working kitchen, that thermal resilience matters. A dish that can go from a chilled larder into a hot oven — or be used to carry food from the oven directly to a buffet or table — removes a handling step and reduces the risk of breakage during service. The transparent construction also makes it straightforward to check food colour and doneness without lifting or disturbing the dish.

• Suitable for oven, microwave, and dishwasher use
• High thermal shock resistance for oven-to-table service
• Glass construction allows visual monitoring of cooking progress
• Doubles as a food storage vessel for chilled or ambient use
• Straightforward to clean by hand or in a commercial dishwasher

It is worth noting that glass cookware of this type is better suited to lower-intensity, moderate-volume operations — catering for small functions, care homes, bed and breakfast kitchens, or front-of-house buffet service — rather than high-throughput production kitchens where metal gastronorms and bakeware tend to be more practical. The glass is durable within its intended use, but it will not withstand the knocks and stacking pressures of a busy brigade environment in the way steel trays would.

If you are unsure whether glass bakeware is the right choice for your service style or kitchen setup, we are happy to talk it through.

The Steelite Simplicity oblong roaster is a practical piece of oven-to-table cookware made from alumina vitrified ceramic. Each dish moves directly from preparation through cooking and on to the pass without any need to transfer food to separate serving dishes, which is a straightforward efficiency gain during a busy service.

In commercial kitchen use, the ceramic construction handles the thermal demands of high-temperature ovens without issue, and the material's thermal shock resistance means dishes can go straight from frozen storage into the oven — a useful characteristic when working with batch-prepared or blast-chilled food. The vitrified surface is non-porous, which supports easier cleaning and helps resist staining and odour absorption over repeated use cycles.

Practical advantages for operators include:

• Oven-to-table format reduces washing-up and plating time during service
• Thermal shock resistance supports straight-from-freezer-to-oven working practices
• Non-porous vitrified surface resists staining and simplifies cleaning
• Supplied as a pack of six, providing practical cover for service volume
• Lifetime edge chip warranty from Steelite offers a degree of long-term value assurance

These roasters are well suited to restaurants, hotel kitchens, and hospitality operations where a consistent, presentable oven-to-table format is part of the service style. The pack-of-six format suits operations with moderate to high turnovers of covers. For higher-volume sites running continuous service across multiple sections, a larger pack quantity or heavier-gauge alternative may be worth considering.

If you are unsure whether this size and format fits your menu or service style, the team is happy to talk it through with you.

The Steelite Simplicity oblong roasters are alumina vitrified ceramic dishes designed for both cooking and table presentation. They are well suited to operations that want to move food directly from oven to table without transferring it to separate serving dishes — a practical approach that reduces handling, keeps food hotter for longer, and cuts washing-up during busy service periods.

In a commercial kitchen context, the thermal shock resistance of this ceramic is a genuinely useful property. Dishes can go from cold storage into a hot oven without cracking, which supports prep-ahead workflows common in restaurants, hotels, and contract catering environments. The material also retains heat reasonably well once on the table, which helps maintain food temperature during service.

From a practical standpoint, the key advantages for kitchen operators include:

• Oven-to-table presentation reduces the need for separate serveware
• Thermal shock resistance supports cold-to-oven workflows without damage
• Consistent ceramic finish is straightforward to clean and resists staining
• Pack of six supports consistent presentation across multiple covers
• The Lifetime Edge Chip warranty offers reassurance against day-to-day handling damage

These roasters are sized for sharing dishes, side servings, or individual portion roasts depending on how they are used. They are not heavy-duty roasting trays intended for repeated high-temperature roasting of large joints — operations with that kind of demand should consider whether a more robust aluminium or cast iron option would be more appropriate for the primary cooking stage, reserving these for finishing and presentation.

Well suited to restaurants, hotel dining, event catering, and any operation that values consistent table presentation. If you are unsure whether these fit your service style or portion sizes, the team is happy to talk it through before you order.

The Steelite Simplicity square roaster is an alumina vitrified ceramic dish designed for professional oven-to-table service. At 255mm across and holding just under two litres, it sits comfortably in the mid-size range for individual portions or sharing dishes — practical for braises, roasted vegetables, gratins, pasta bakes, and similar preparations that move directly from cooking to the pass.

In a working kitchen, the material does most of the practical work. Alumina vitrified ceramic handles thermal shock well, meaning these dishes can move from frozen storage into a hot oven without the cracking risk associated with cheaper ceramics. That removes a handling step and reduces breakage risk during prep and service, which matters when you are running a full section. The glaze is robust enough for daily commercial use and the white finish holds up against the kind of staining and marking that accumulates quickly in a busy environment.

Key practical points for kitchen operators:

• Thermal shock resistance supports freezer-to-oven workflow without pre-conditioning
• Oven-to-table presentation reduces the need for separate serving dishes
• Alumina vitrified ceramic construction offers durability above standard earthenware
• Lifetime edge chip warranty reflects confidence in day-to-day resilience
• Sold in a pack of six, suited to batch purchasing for consistent table presentation

These are straightforward pieces with no installation requirements. Storage space and existing crockery aesthetic are the main practical considerations — the square format stacks efficiently but takes slightly more shelf space than equivalent round dishes. The pack-of-six format suits operations setting up a section or standardising their cookware range.

These roasters are well suited to restaurants, gastropubs, and hotel kitchens that serve oven-cooked dishes directly at the table. For very high-volume or banqueting environments where throughput demands a larger format or deeper capacity, it is worth reviewing other sizes in the Simplicity range first.

If you are unsure which size or quantity best fits your menu and service style, the team is happy to talk it through before you order.

This is a full 1/1 gastronorm roasting dish from Matfer Bourgeat, constructed in stainless steel and produced to the standard GN footprint that fits directly into commercial ovens, bain-maries, and hot holding equipment. The 20mm depth makes it well suited to roasting, baking, and reheating tasks where a shallow profile is an advantage — browning vegetables, roasting proteins, or finishing gratins without the excess volume of a deeper tray.

In a busy kitchen environment, consistency of fit matters as much as the dish itself. Because this tray conforms to full GN sizing, it works across the standard range of combi ovens, convection ovens, and holding cabinets without adjustment or guesswork. Stainless steel construction handles the thermal demands of repeated oven cycling reliably, resists warping under high heat, and is straightforward to clean after service.

• Full 1/1 GN format fits standard commercial ovens and holding equipment directly
• 20mm shallow depth suited to roasting, browning, and finishing dishes
• Stainless steel construction resists warping under repeated high-heat use
• Smooth interior surface cleans down quickly after service
• Produced by Matfer Bourgeat to consistent commercial-grade standards

There are no special installation requirements — this is a hand-use item that fits into existing GN-compatible equipment. It is worth confirming your oven or holding unit accepts full 1/1 GN trays before ordering, particularly in smaller kitchens where half-GN equipment is more common. For higher-volume operations running multiple trays simultaneously, it is worth building up a working stock rather than relying on a single tray per service.

This dish is a practical choice for restaurants, hotels, contract caterers, and pub kitchens running standard GN-compatible equipment and looking for a reliable, workaday roasting tray from a well-regarded manufacturer. If you are unsure whether this depth suits your menu or whether a deeper GN tray would serve you better, the team is happy to help you work it out.

The Pyrex 1.5 litre loaf dish is a straightforward glass baking dish suited to bread, terrines, pâtés, and loaf-style cakes. It is made from borosilicate glass, which handles the thermal movement between oven heat and cooler surfaces more reliably than standard glass — a practical consideration when dishes are moving between oven, worktop, and refrigerator during a busy prep shift.

In a commercial context, this dish is best understood as a prep and presentation piece rather than high-throughput production bakeware. The glass construction allows even heat distribution during baking, and the transparent sides let you monitor progress without opening the oven. The two integrated handles make it manageable when transferring a hot dish, though standard oven cloths or gloves remain necessary.

Practically, the dish offers a few useful characteristics for kitchen use:

• Borosilicate glass resists thermal shock, reducing the risk of cracking under normal kitchen temperature changes
• Non-porous glass surface does not absorb odours or flavours between uses
• Suitable for oven, freezer, and refrigerator use within normal catering workflows
• Smooth surface is straightforward to clean by hand or in a commercial dishwasher
• Can move directly from oven to table for buffet or counter service presentation

This is a single-piece glass item with no special installation or utility requirements. It is worth noting that glass bakeware of this type is not suited to direct flame, hob use, or broiler/grill elements at close range. Dropping or knocking against hard surfaces remains the most common cause of breakage, so storage considerations in a busy kitchen are worth thinking through.

The Pyrex loaf dish is well suited to small catering operations, hotel breakfast kitchens, café bakeries, and prep kitchens producing individual loaf portions or moulded dishes. It is not intended for high-volume production environments where stackable metal or silicone bakeware would typically be more practical.

If you are unsure whether this dish fits your prep workflow or portion requirements, we are happy to help you think it through.

The Revol Belle Cuisine roasting dish is a glazed porcelain piece finished to resemble cast iron, giving it a robust, professional appearance that works equally well in a commercial oven and on a dining table. At 340mm in length and 3.5 litres capacity, it sits in a practical mid-size bracket — large enough for a generous individual portion presentation or a small shared dish, but compact enough to move around a busy kitchen without awkwardness.

Revol manufactures in France using a high-fired porcelain that withstands repeated oven use without warping or crazing. The cast iron finish is purely aesthetic, but the construction itself is genuinely durable under the daily thermal cycling that commercial kitchens put cookware through. Unlike actual cast iron, there is no seasoning requirement and no risk of rust — it goes straight into the dishwasher at the end of service.

From an operational standpoint, the key practical advantages are:

• Integrated porcelain handles with rounded edges for secure grip when moving hot dishes
• Oven-safe construction that supports direct service from oven to table, saving plating time
• Non-porous glazed surface that does not absorb flavours or odours between uses
• Dishwasher-safe for straightforward end-of-service cleaning
• Consistent presentation finish that holds up well in a front-of-house setting

This dish is well suited to restaurants, gastropubs, or hotel kitchens that serve individual or small shared portions and want cookware that presents neatly at the table without requiring a separate serving vessel. It is not intended for high-volume batch cooking or applications requiring large-format roasting trays.

If you are considering this dish for a specific menu format or service style and want to confirm it is the right fit, the team is happy to talk it through.
